Ah Paris! The seafood is always so fresh, and the dozens of varieties of oysters on display always make the connoisseur of oceanic bivalves drool in anticipation. The markets on Rue de la Roquette in the 12th Arrondissement aren't unique in Paris -- it is just that food, its freshness and presentation, are of utmost importance to the French.
